1 1/2 lbs lean pork , cut into 1-inch cubes
1 cup water

2 large tart apples , peeled , cored , sliced
1 tablespoon sugar
1 egg yolk

Instructions

1.To make the pastry, mix the flour and salt together in a large bowl.
2.Rub the lard into the mixture until it forms a breadcrumb-like texture.
3.Add cold water to the mixture, one tablespoon at a time, until the pastry comes together into a ball.
4.Roll out the pastry dough on a floured surface to a 1/4 inch thickness and use it to line a greased baking dish.
5.In a large saucepan, brown the pork over medium heat.
6.Add water, onion, sage, and salt, and bring to a boil.
7.Reduce the heat, cover, and simmer for 45-60 minutes or until the pork is tender.
8.In a small bowl, mix together milk and all-purpose flour to make a paste.
9.Add the paste to the pork mixture, stirring constantly until it thickens.
10.Pour the pork mixture into the pastry-lined baking dish.
11.Arrange the apple slices on top of the pork mixture and sprinkle with sugar.
12.Roll out the remaining pastry dough on a floured surface and use it to cover the apples.
13.Mix together the egg yolk and milk, and brush the top of the pastry with the mixture to give it a golden-brown colour.
14.Bake the pie in the oven preheated to 400°F for 30-35 minutes or until the pastry is golden brown.
15.Let the pie cool for a few minutes before serving.
