Ingredients

1 lb dried penne
3 tablespoons olive oil , separated
1 medium sugar pumpkin or 1 medium winter squash ( I prefer butternut )
1 large onion
1 medium tomatoes , deglopped and coarsely chopped
1 jar roasted red pepper , rinsed , drained , and cut into strips
4 tablespoons pine nuts
8 ounces shredded mozzarella cheese
8 ounces shredded sharp cheddar cheese
1/2 teaspoon seasoning salt ( ie Lawry 's ; I prefer CVS )
1/2 teaspoon ground black pepper
6 ounces evaporated milk
1/2 cup dried breadcrumbs

Instructions

1.Preheat oven to 350 degrees F.
2.Cook penne according to package instructions until just before al dente, drain and rinse with cool water.
3.Cut the pumpkin or squash in half, remove seeds and fibers, and cut into small pieces. Dice the onion.
4.In a large skillet over medium heat, add 2 tablespoons of olive oil and sauté onions until they are translucent, then add in the pumpkin or squash and cook until tender.
5.Add chopped tomatoes, roasted red pepper, and pine nuts. Sauté for an additional 2-3 minutes.
6.Add cooked penne and stir to combine. Add shredded mozzarella and sharp cheddar cheeses, seasoning salt, black pepper, and evaporated milk. Mix well.
7.Grease a baking dish with the remaining 1 tablespoon of olive oil. Transfer the pasta mixture to the dish, then sprinkle breadcrumbs on top.
8.Bake in preheated oven for 25-30 minutes, until it is thoroughly heated and the cheese has melted.
