Ingredients

1 lb lean ground chicken
1 can low-sodium tomato sauce
1 package whole wheat egg noodles
1 cup 1 % fat cottage cheese
1 cup light sour cream
1 package neufchatel cheese
1 bunch scallion
2 tablespoons green peppers , finely chopped
2 cups part-skim mozzarella cheese
1/4 teaspoon salt
This Irish Lasagna Casserole is a delicious take on the classic Italian dish. It's a hearty meal that is perfect for a cozy night in. Instructions

1.Preheat oven to 375 F (190 C).
2.Cook the egg noodles according to package instructions and drain.
3.Brown the ground chicken in a pan on medium-high heat for about 8 minutes or until cooked through. Add the tomato sauce and salt to the pan and simmer for 2-3 minutes.
4.In a bowl, mix the cottage cheese, sour cream, neufchatel cheese, scallions, and green peppers together.
5.In a 9x13 inch baking dish, layer half of the egg noodles on the bottom. Spread half of the cottage cheese mixture over the noodles, then half of the chicken mixture. Repeat the layers with the remaining noodles, cottage cheese mixture and chicken mixture.
6.Top the casserole with mozzarella cheese and bake for 30-35 minutes or until bubbly and golden brown. Let it sit for 5-10 minutes before serving.
