Irish Dried Cherry Buttermilk Scones are a delicious and easy-to-make breakfast treat that is perfect for anyone who loves a tart and unique flavor. These scones are made with cake flour, which gives them a light and airy texture, and they are studded with dried sour cherries for a tangy burst of flavor in every bite. The addition of buttermilk helps to keep the scones moist and tender, while also adding a slight tanginess to the overall flavor. These scones are best when they are served warm, split and spread with butter or jam, and enjoyed with a hot cup of coffee or tea.

Instructions

1.Preheat oven to 425°F. In a small bowl whisk together 1/2 cup buttermilk, egg, brown sugar, and vanilla.
2.In a separate large bowl, using a pastry blender or your fingers, blend flour, baking powder, baking soda, and salt until mixture resembles coarse meal. Cut butter into small pieces and blend into flour mixture until it resembles coarse meal.
3.Add buttermilk mixture and dried cherries to flour mixture and stir until just combined.
4.Turn mixture out onto a lightly floured surface and with floured hands knead gently into a 1-inch-thick round. Cut out as many rounds as possible with a 2 1/2-inch round cutter and arrange about 1 inch apart on an ungreased baking sheet. Gather scraps and continue to cut out rounds in same manner until all of dough is used.
5.Brush tops of scones with remaining buttermilk and sprinkle with granulated sugar.
6.Bake scones in middle of oven until pale golden and cooked through, about 15 minutes. Transfer scones to a rack and cool slightly. Scones are best when they are served warm, split and spread with butter or jam.
