Ingredients

1 lb fresh asparagus ( I use frozen )
1 cup potato
2 medium leeks
5 tablespoons butter , separated
5 cups chicken stock
4 tablespoons creme fraiche
salt and pepper

Instructions

1.Begin by preparing the asparagus. Cut off the woody ends and discard. Cut the remaining stalks into pieces.
2.Peel the potato and cut into small cubes.
3.Trim the leeks and slice them into thin rounds. Rinse well in cold water and drain.
4.Melt 3 tablespoons of butter in a large pot over medium heat. Add the leeks and sauté for 5 minutes or until softened.
5.Add the potato, asparagus, and chicken stock. Simmer over low heat until the vegetables are tender, about 20-30 minutes.
6.Remove from heat and let it cool for a while. Puree the soup with a blender.
7.Put the blended soup into the pot again and reheat until hot.
8.Add salt and pepper to taste, then stir in the creme fraiche. Melt the remaining 2 tablespoons of butter in a small pan and stir it into the soup.
9.Serve hot and enjoy!
