Instructions

1.Preheat the oven to 300°F.
2.In a medium saucepan, heat heavy cream over medium heat until bubbles start to form around the edge.
3.In a separate bowl, whisk together sugar, egg yolks, vanilla extract, and Irish cream liqueur until well combined.
4.Add about 1/4 of the hot cream to the egg mixture and whisk until smooth. Repeat with the remaining cream, whisking well between each addition.
5.Strain the mixture through a sieve into a large measuring cup with a spout.
6.Divide the mixture evenly among six 5 oz. ramekins.
7.Place the ramekins in a large baking dish and fill it with enough hot water to come halfway up the sides of the ramekins.
8.Bake for 35-40 minutes or until the custard is set but still jiggly in the center.
9.Let the ramekins cool down before refrigerating for at least 2 hours.
10.When ready to serve, sprinkle the top of each custard with a thin layer of superfine sugar and use a torch or broiler to caramelize the sugar until golden brown and crispy.
