2 tablespoons sugar
2 tablespoons flour
1/4 cup unsalted butter , melted
1 1/2 cups heavy cream ( divided )
3/4 cup Baileys Irish Cream
2 1/2 cups semi-sweet chocolate chips
2 egg yolks , slightly beaten , at room temperature
4 teaspoons vanilla ( divided )
2 tablespoons powdered sugar
Andes mints candies ( garnish )

Instructions

1.Preheat the oven to 375F.
2.In a bowl, mix together the cookie crumbs, sugar, flour, and melted butter.
3.Press into an 8-9 inch pie dish and bake for 8-10 minutes.
4.In a saucepan, bring 1 cup of heavy cream to a simmer and then add in the Irish cream and chocolate chips, stirring until smooth.
5.Beat the egg yolks with 2 teaspoons of vanilla and then slowly stir into the chocolate mixture.
6.Pour the filling into the crust and bake for 10-12 minutes or until set.
7.Cool to room temperature and then chill for at least an hour before serving.
8.Whip the remaining heavy cream, powdered sugar, and 2 teaspoons of vanilla until stiff peaks form and then spread over the top of the pie.
9.Garnish with Andes mints candies.
