Instructions

1.Preheat the oven to 375°F.
2.In a large pot of salted boiling water, cook the potato and parsnips until they are tender.
3.Cut off the roots and the dark green parts of the leeks. Cut the remaining parts into thin slices.
4.In a small saucepan, heat the milk.
5.In a large pot of salted boiling water, cook the kale or cabbage until it is tender. Drain the kale/cabbage and chop it into small pieces.
6.In a large bowl, mix together the cooked potato, parsnips, milk, mace, garlic, salt, pepper, and 1 tablespoon of butter.
7.In a large skillet, melt 1 tablespoon of butter over medium heat. Add the leeks and sauté until they are tender.
8.Add the chopped kale/cabbage to the skillet and sauté for another 2-3 minutes.
9.In a 9-inch baking dish, spread the potato mixture evenly.
10.Add the sautéed leeks and kale/cabbage on top of the potato mixture.
11.Top the casserole with chopped fresh parsley.
12.Bake for 25-30 minutes until it is heated through and the top is golden brown.
13.Serve hot.
