Irish coffee brownies are a delicious and unique twist on traditional brownies. The addition of Irish whiskey and coffee crystals in the batter not only creates an irresistible flavor, but the smell as they bake is divine. This recipe is lighter than most of the brownie recipes out there by using sugar substitute, heart-healthy margarine, and non-fat milk while still providing the same irresistible taste. This recipe is perfect for baking novices or for those looking for a unique sweet treat. You can serve it as a dessert or for snack with coffee or tea.

Instructions

.Preheat oven to 350°F, and spray an 8-inch square baking dish with non-stick cooking spray.
.In a large bowl, combine granulated sugar, Splenda granular, and margarine. Beat until light and fluffy.
.Add unsweetened applesauce, cocoa powder, egg white, and vanilla. Mix until well combined.
.In a separate bowl, whisk together flour, baking powder, and baking soda. Add to wet ingredients, alternating with non-fat milk, and mix until everything is incorporated well.
.In a small microwave safe bowl, combine Irish whiskey and coffee crystals. Heat for 30 seconds, stir and heat again for additional 30 seconds.
.Stir whiskey-coffee mixture into the brownie batter, and then fold in walnuts.
.Pour batter into the prepared baking dish and place in the oven. Bake for approximately 20-25 minutes or until brownies are set.
.Remove from the oven, let it cool.
.Meanwhile, prepare the frosting. In a medium-sized bowl, beat the remaining Splenda granular, cocoa powder, Irish whiskey, vanilla extract, and brewed coffee until well combined.
.Spread icing over the cooled brownies and sprinkle chopped walnuts over the top if desired. Cut into squares and serve. Store any leftovers in an airtight container at room temperature for up to three days.
