1/4 head green cabbage , shredded
1/2 lb red potatoes , scrubbed and diced
1 lb ground sirloin
3 tablespoons tomato paste
1/2 teaspoon Worcestershire sauce
1/2 teaspoon dried thyme
coarse salt
fresh ground black pepper
crushed red pepper flakes ( optional )
all-purpose flour , for rolling

Instructions

1.Preheat the oven to 375°F (190°C).
2.In a large skillet over medium-high heat, heat the oil. Add the cabbage and potatoes, and cook, stirring occasionally, until they begin to soften, about 8 minutes.
3.Add the beef, tomato paste, Worcestershire sauce, thyme, 1 teaspoon salt, 1/4 teaspoon black pepper, and red pepper flakes, if using. Cook, breaking up the meat with a wooden spoon, until browned, about 7 minutes. Remove from heat and let cool slightly.
4.On a lightly floured surface, roll out each pie crust to a thickness of about 1/8 inch. Cut each crust into 4 equal pieces.
5.Divide the filling among the 8 pieces of crust, spooning it onto one half of each piece and leaving a border around the edge. Brush the edges with water and fold the other half over the filling. Press the edges together to seal.
6.Place the pies on a baking sheet lined with parchment paper. Cut 3 small slits in the top of each pie to allow steam to escape. Bake until golden brown and crispy, about 25 minutes.
