Ingredients

1/2 cup white sugar
2 1/2 cups water
1 1/2 tablespoons butter
1/2 cup rice flour
1/2 teaspoon freshly ground cardamom
1/2 tablespoon rose water ( I prefer Iranian , rose waters vary greatly in quality )
hand full slivered almonds , toasted in a dry pan
1/2 - 1 teaspoon crushed pistachio nut , to almost a powder ( optional )

Instructions

3.Gradually add the sugar syrup to the rice flour mixture, whisking constantly until the mixture thickens and comes to a boil.
4.Reduce the heat to low and stir in the cardamom and rose water. Cook, stirring frequently, until the mixture becomes thick and glossy, about 5-8 minutes.
5.Pour the mixture into molds or a greased baking dish and let cool to room temperature.
6.Once set, remove the Halwa from the molds or baking dish and garnish with toasted almonds and crushed pistachios (optional).
