Ingredients

1 1/2 - 2 lbs stewing beef ( or lamb )
2 cans chickpeas
2 cans white beans
2 medium onions , peeled and quartered
1 teaspoon salt
1 tomatoes , peeled and quartered
1 teaspoon turmeric
3 tablespoons lemon juice
Iranian Wash-Day Stew, also known as Aabgoosht, is a traditional Persian dish that is usually prepared on wash day. The name Aabgoosht literally means 'meat water', as the stew is originally made by boiling leftover meat and water together. Today, we are sharing a recipe for a basic version of this dish that has been modified to suit modern tastes. The stew is hearty and flavorful, and perfect for a cozy night in with family or friends. It can be easily customized by adding different vegetables and spices according to your preference.

Instructions

1.In a large pot, add the stewing beef (or lamb) and enough water to cover the meat.
2.Bring the pot to a boil and reduce the heat to low.
3.Add the chickpeas, white beans, onions, salt, and turmeric. Stir well.
4.Cover the pot and let it simmer on low heat for about 1 hour and 30 minutes, or until the meat is tender.
5.Add the tomatoes and lemon juice and cook for another 10 minutes.
6.Serve hot with crusty bread or rice.
