Ingredients

1 cup rice
4 cups water
1/4 teaspoon saffron
1/2 teaspoon warm water
2 small potatoes
1/4 cup melted butter
Iranian Rice With Potato Crust and Saffron is a beautiful and fragrant dish that reflects the flavors and culture of Iranian cuisine. Instructions

1.Rinse the rice with cold water and drain. Add 4 cups of water in a pot and bring the water to a boil.
2.Add the rice to the boiling water and cook uncovered for 6 minutes, stirring occasionally.
3.In a small bowl, mix the saffron threads with 1/2 teaspoon of warm water.
4.Drain the rice and put it in a mixing bowl.
5.Pour half of the saffron water over the rice and mix well.
6.Peel and cut potatoes into thin slices. Coat the bottom of a nonstick pot with melted butter.
7.Arrange the potato slices in a single layer over the pot bottom, making sure that they overlap and cover the bottom completely.
8.Pour the rice mixture into the pot, spreading it evenly on top of the potato layer.
9.Add the remaining saffron water on top of the rice. Cover the pot with a lid.
10.Cook on high heat for 2 minutes, then reduce the heat to low and cook for 50 minutes.
11.Remove from heat and let it sit for 5 minutes before inverting the pot onto a serving dish. The potato crust should be on top.
