Ingredients

1 1/2 cups rice
3 cups cooked chicken
2 tablespoons butter
1 onion , chopped
2 tablespoons pine nuts

1/2 teaspoon cinnamon

4 cups chicken broth
6 dried apricots , chopped
3 tablespoons sultanas

Instructions

1.Rinse rice until the water runs clear

7.Cook for 15 minutes until the broth has been absorbed and the rice is tender
8.Mix cooked chicken in the rice and let sit for another 5 minutes before serving
