8 beef scallopini ( Milanese cut , long and very thin )
all-purpose flour , for dredging
1/2 cup dry white wine
1 bay leaf
1 can diced tomatoes in tomato puree
1/2 cup frozen peas
2 ounces thinly sliced prosciutto , coarsely chopped

Instructions

1.In a large skillet, heat the olive oil and butter over medium heat. Add the carrots, onion, and garlic, stirring occasionally, until the vegetables are tender and the onion is translucent.
2.Remove the skillet from the heat and stir in the parmesan cheese. Season the vegetable mixture with salt and freshly ground black pepper according to taste.
3.Divide the vegetable mixture evenly among the beef scallopini, spreading it out in a single layer on each piece. Roll each scallopini up tightly to enclose the filling, and secure it with a toothpick.
4.Spread a thin layer of all-purpose flour on a plate. Dredge each beef roll in the flour, shaking off any excess.
