1 package dry kidney beans
1 tablespoon olive oil
1 link smoked beef sausage , sliced
6 ounces frozen onion , green bell pepper , and celery mix
4 cloves garlic , minced
1 carton chicken broth
1/4 teaspoon ground thyme
2 bay leaves
4 cups cooked rice
Red beans and rice is a classic Louisiana Creole dish that has become popular throughout the United States. Instructions

1.Rinse and sort the dry kidney beans in a colander, set aside.
2.Turn on the Instant Pot® and select Saute mode. Once hot, add the olive oil and sliced smoked beef sausage. Cook until browned, stirring occasionally.
3.Add the frozen onion, green bell pepper, and celery mix along with the minced garlic. Stir and cook for 2-3 minutes.
4.Add the rinsed kidney beans, chicken broth, ground thyme, and bay leaves. Stir well.
5.Close the lid and set Instant Pot® to high pressure for 25 minutes. Allow for natural pressure release for 15 minutes before using quick release.
6.Remove the bay leaves and serve over 1 cup of cooked rice per person.
