1/3 cup Japanese sushi-style rice

4 ounces sashimi-grade yellowfin tuna , cut into small chunks
1/3 cup mayonnaise
3 tablespoons chile oil , or more to taste
1 tablespoon sesame oil
1 tablespoon sriracha sauce
1 green onion , diced
3 sheets nori , cut in half
1/2 small ripe avocado , thinly sliced
1/4 English cucumber , cut into matchsticks

Instructions

1.Rinse the sushi rice in a fine mesh strainer until the water runs clear.
2.In a medium saucepan, combine the rice, water, rice vinegar, sugar, and salt. Bring to a boil over medium-high heat.
3.Reduce the heat to low, cover, and simmer for 18 minutes or until the rice is tender and the water is absorbed.
4.In a small bowl, mix together the tuna, mayonnaise, chile oil, sesame oil, sriracha sauce, and green onion.
5.Place a sheet of nori shiny-side down on a sushi mat or piece of plastic wrap.
6.Spread about 1/3 cup of the cooked sushi rice on the nori, pressing it down gently with wet fingers.
7.Flip the nori over so the rice is facing down on the mat or plastic wrap.
8.Arrange the avocado and cucumber in the center of the nori.
9.Spoon the tuna mixture on top of the avocado and cucumber.
10.Using the sushi mat or plastic wrap, roll the sushi tightly, tucking in the fillings as you go.
11.Repeat with the remaining nori and fillings.
12.Cut the sushi rolls into 8 pieces each using a sharp knife, wiping the blade clean between cuts.
