Ingredients

2 boneless skinless chicken breasts ( or equivalent weight of skinless chicken thighs )
1 can green chilies
1 can black beans , drained and rinsed
1 can pinto beans , drained and rinsed
1 can corn , do not drain ( I sometimes add an extra can )
1 can tomato sauce
2 cans chicken broth
taco seasoning
1/2 cup salsa

Instructions

1.In a large pot, cook the chicken over medium-high heat until no longer pink, then shred it and set aside.
2.In the same pot, combine the green chilies, black beans, pinto beans, corn, tomato sauce, chicken broth, taco seasoning, and salsa. Bring to a boil.
3.Reduce heat and let simmer for 15 minutes.
4.Add the shredded chicken to the pot and let simmer for an additional 5 minutes.
5.Serve hot, topped with shredded cheese, fresh cilantro, and tortilla chips.
