Ingredients

1 lb dry lentils
1 bay leaf
2 teaspoons fresh thyme
6 cups chicken broth
3 medium carrots , peeled and chopped
1 whole medium onion , peeled
1/2 cup fresh lemon juice
1/4 cup chopped fresh parsley
1/4 cup olive oil
1/4 cup sliced scallion
salt and pepper , to taste

Instructions

1.Rinse lentils and pick over for any debris or small stones

3.Drain the lentils, discarding the bay leaf and onion, and transfer to a large bowl
4.Add the carrots, lemon juice, parsley, olive oil, and scallions and toss to combine
5.Season with salt and black pepper to taste and serve warm
