Ingredients

227 g egg noodles
1 shallot , chopped
3 candlenuts
2 garlic cloves , crushed and chopped
3 stalks green onions , chopped , split white and green parts
5 cups Chinese cabbage , shredded
2 medium carrots , slices in julianne
1 lime , press and roll to release the juice
1 tablespoon homemade curry paste ( see my Indonesian Style Curry Paste recipe )
2 tablespoons indonesian sweet soy sauce
1/2 teaspoon whole black peppercorn
1/2 teaspoon salt
ground black peppercorns
2 tablespoons vegetable oil
coriander leaves , chopped ( to garnish )

Instructions

1.Boil the egg noodles as per package instructions.
2.Once boiled, rinse under cold water and set aside.
3.In a blender, mix the shallot, garlic, and candlenuts until it becomes a paste.
4.In a pan, heat the vegetable oil and fry the paste until fragrant.
5.Add the white part of the green onions to the pan and fry for 1 minute.
6.Add the Chinese cabbage and carrot slices and mix well.
7.Add the homemade curry paste, indonesian sweet soy sauce, black peppercorn, and salt, and mix until well combined.
8.Add the boiled noodles and toss until the noodles are evenly coated.
9.Add the green part of the green onions and mix again.
10.Squeeze lime juice over the noodles and sprinkle ground black pepper on top.
11.Garnish with coriander leaves before serving.
