Ingredients

1 1/2 kg lamb shoulder ( roast )
1 lemon , juice of
2 tablespoons dark soy sauce
3 -4 drops Tabasco sauce
1 tablespoon oil
2 garlic cloves , chopped
1 teaspoon ground coriander
1/2 teaspoon ground ginger
1/4 cup brown sugar
2 tablespoons smooth peanut butter
1/4 cup water
Indonesian roast lamb is a dish that blends the flavors of Indonesia and Australia. It’s a succulent and tender roast lamb with a unique twist of Indonesian flavor. Instructions

1.Preheat oven to 160°C fan-forced.
2.Place lamb in a baking dish.
3.In a bowl, whisk lemon juice, soy sauce, Tabasco, oil, garlic, coriander, ginger, brown sugar, peanut butter, and water.
4.Pour the mixture over the lamb and rub it well.
5.Cover tightly with foil and roast for 4 hours.
6.After 4 hours, increase the oven temperature to 220°C and roast for another 15-20 minutes to brown the lamb well.
7.Remove from oven and let it sit for 15 minutes before serving.
