Ingredients

2 phyllo pastry sheets , covered with plastic wrap and a damp towel
1 tablespoon unsalted butter , melted
cooking spray
2 ripe peaches , halved , pitted , quartered , sliced 1/4-inch thick
8 teaspoons light brown sugar ( or you can use raw sugar )
Individual peach pastries are a twist on the traditional peach cobbler. While the inside filling is similar to cobbler with its juicy, sweet peaches, the wrapping in layers and the phyllo pastry base is added yumminess and gives it a flaky exterior. You can have these pastries during breakfast with coffee or as an after-dinner dessert. They are perfect for those who enjoy seasonal fruit, crustiness, and sweetness in combination. This recipe is sure to add some pizzazz to your regular meal plans.

Instructions

1.Preheat your oven to 400°F (200°C).
2.Place the phyllo pastry sheets on a work surface. Brush one sheet with the melted butter and place the other sheet on top. Brush the second sheet with more melted butter. With a sharp knife, cut the pastry sheets into 4 equal-size pieces.
3.Coat a muffin tin with cooking spray. Take a pastry piece and press it into the muffin cup, gently pressing it against the sides. Repeat with the remaining pastry pieces.
4.Place a few slices of peach in each pastry shell. Sprinkle 1 teaspoon of light brown sugar on top of the peaches.
5.Bake for 15-18 minutes or until the edges of the pastry are golden brown. Remove the pastries from the oven and let them cool for a few minutes before serving.
