14.Fold in the egg whites until no streaks remain.
15.Spoon the mixture into the prepared ramekins, filling to about 1/4 inch below the rim.
16.Sprinkle with the remaining grated cheese.
17.Bake for 15 to 17 minutes, until puffed and golden brown.
18.Serve immediately.
