Ingredients

2 filet mignon
1 pinch salt
1 pinch pepper
1 tablespoon vegetable oil
2 cups mushrooms , chopped
1/2 onion , finely chopped
2 tablespoons butter
1/4 cup Italian seasoned breadcrumbs
1 puff pastry , frozen and thawed
1 egg white , beaten
Individual Beef Filet Wellingtons is a classic French dish, usually made for special occasions. Filet mignon, also known as the tenderloin, is the most exquisite cut of beef, and its high-fat content makes it stand out for having tender texture and rich flavour. Instructions

1.Preheat the oven to 425°F.
2.Season the filet mignon with salt and pepper to taste.
3.Heat the vegetable oil in a pan over high heat. Sear the filet mignon for 1-2 minutes on each side until a crust forms. Remove the steak from the pan and let it cool.
4.Add mushrooms and onions to the same pan and sauté until soft and golden. Remove the mixture from heat and let it cool.
5.Melt the butter in a small pot. Add the breadcrumbs and stir until well mixed.
6.On a lightly floured surface, roll out the puff pastry into a square shape. Cut it into 4 equal pieces.
7.Spread the crumb mixture over the top of each piece.
8.Center each seared filet mignon on top of each puff pastry square.
9.Spoon the mushroom mixture on top of each piece.
10.Fold the pastry over the top of the steak and mushroom mixture, making sure to seal the edges with the beaten egg white.
11.Place the pastries on a baking sheet. Brush the egg white over the top of each pastry and bake for 15-20 minutes or until golden brown.
