The mushroom filling adds depth and flavor to the beef, making for a delicious combination. Topped with sliced chives, this recipe is visually impressive and sure to be a crowd-pleaser. Keep in mind that this recipe is a bit time-consuming and indulgent, but worth the effort for a special meal.

Instructions

.Preheat the oven to 400°F.
.In a food processor, pulse the mushrooms, shallots, and garlic until finely chopped.
.In a large skillet over medium-high heat, melt the butter with the oil. Add the mushroom mixture and sauté until the liquid has evaporated and the mushrooms are lightly browned, about 10 minutes.
.Remove from heat and stir in the parsley, salt, and pepper. Let the mixture cool for 10 minutes.
.Cut each filet in half horizontally to make 12 slices. Season each slice with salt and pepper, then place each slice into a muffin cup that has been lightly greased with butter and oil. Brush the exposed beef with melted butter.
.Cut the phyllo sheets into 6 squares. Place a square over each muffin cup, pressing it down into the crevices of the muffin tin. Brush the phyllo with melted butter. Repeat with 5 more layers of phyllo, brushing each layer with butter.
.Place the muffin tin in the oven and bake until the phyllo is golden brown, 15 to 20 minutes.
.Remove the croustades from the oven and let them cool for 5 minutes. Use a small knife to gently lift them out of the tin and onto plates. Sprinkle with chives and serve.
