Ingredients

1 cup basmati rice
2 tablespoons oil
1 carrot ( diced )
5 beans ( diced )
1/4 cup green peas
1 bay leaf
3 cloves
2 cardamoms
1 inch cinnamon stick
2 chopped onions
1 teaspoon ginger , minced
1/2 teaspoon garlic , minced
2 green chilies , slit
1/2 teaspoon pepper , freshly ground
1/2 teaspoon coriander powder
2 -3 pinches turmeric powder
salt
1 teaspoon chopped coriander leaves
1 teaspoon chopped mint leaf
2 -3 drops lemon juice
Indian Vegetable Rice(PULAO) is a popular and flavorful rice dish from India, made with a variety of vegetables and aromatic spices. Instructions

1.Rinse the rice thoroughly until the water runs clear and soak it in enough water for 30 minutes.
2.In a pressure cooker or a pot, heat oil over medium heat and add the bay leaf, cloves, cardamoms and cinnamon stick.
3.Add onions, ginger, garlic and green chilies. Cook until the onions turn golden brown.
4.Add the diced carrots, beans and green peas. Cook for 2-3 minutes.
5.Add salt and spices (pepper, coriander powder and turmeric powder). Mix well.
6.Drain the water from rice and add it to the pot. Mix well.
7.Add 1.5 cups of water, coriander leaves, mint leaves and lemon juice. Mix well.
8.Cover and cook until rice is done (around 10-12 minutes in pressure cooker or 20-25 minutes in pot). Let the pressure settle down, open the lid and fluff the rice.
