Ingredients

3 quarts whole milk
3 cups buttermilk
1 tablespoon table salt
1 bag curly spinach , rinsed
1/4 lb mustard greens , stemmed and rinsed
3 tablespoons unsalted butter
1 teaspoon cumin seed
1 teaspoon ground coriander
1 teaspoon paprika
1/2 teaspoon ground cardamom
1/4 teaspoon ground cinnamon
1 onion , chopped fine
salt , to taste
ground black pepper , to taste
3 garlic cloves , minced
1 tablespoon grated fresh ginger
1 jalapeno chile , stemmed seeds removed and rinsed
1 can diced tomatoes , drained and chopped coarse
1/2 cup roasted cashews , chopped coarse ( unsalted )
1 cup water
1 cup buttermilk
3 tablespoons chopped fresh cilantro

Instructions

2.Strain the curds through a cheesecloth-lined colander. Rinse the cheese briefly under cold water to cool it, then press to remove any excess liquid.
3.In a separate pot, cook the spinach and mustard greens, covered, until just wilted and tender, about 5 minutes. Drain and rinse under cold water to cool.
4.In a third pot, heat the unsalted butter over medium heat until foamy. Add the cumin seed, ground coriander, paprika, ground cardamom, and ground cinnamon. Cook for 1 minute or until fragrant.
5.Add the onion and sauté until softened and golden, about 5 minutes. Sprinkle with salt and pepper to taste.
6.Add the garlic, ginger, and jalapeno. Cook for 1 minute, stirring constantly.
7.Add the tomatoes and cook for about 5 minutes, or until they have broken down and thickened.
8.Add the spinach mixture and cook for 2 minutes, or until heated through.
9.Stir in the chopped cashews, water, and 1 cup of buttermilk. Cook for an additional 5 minutes.
10.Stir in the chopped fresh cilantro, and serve with the paneer cheese.
