Ingredients

1 1/2 lbs baby red potatoes
2 tablespoons oil
1/3 cup cashew pieces
1/2 onion , finely chopped
1 tablespoon minced gingerroot
1 clove garlic , minced
4 teaspoons Madras curry powder
1 teaspoon ground turmeric
1/2 teaspoon salt
3 tablespoons water
2 tablespoons plain yogurt
1/4 cup cilantro leaf , chopped
Indian style curried potato salad is an Indian twist to a classic potato salad with the addition of aromatic spices, dry fruits, vegetables, and herbs. Instructions

1.Scrub the potatoes and slice them into bite-sized pieces. Steam them for about 10-12 minutes or until tender but not mushy. Set aside to cool.
2.Heat the oil in a large skillet and add the cashews. Cook over medium heat, stirring frequently until the cashews are golden brown. Remove with a slotted spoon and drain on paper towels.
3.Add the onion, ginger and garlic to the same skillet and stir fry for a minute or two. Add the curry powder, turmeric, and salt and continue frying for another minute.
4.Add the potatoes and 3 tablespoons of water to the skillet and mix well. Cook stirring frequently until the potatoes are coated with the spices and heated through.
5.Remove from heat and let it cool to room temperature.

7.Once the potatoes have cooled, add the cilantro-yogurt mixture to the potatoes and cashews and toss everything well together.
