Ingredients

4 potatoes
4 tablespoons curry powder
1 pinch salt and black pepper
3 tablespoons milk
3 tablespoons plain flour
Croquettes are a type of appetizer or snack that is eaten in many countries around the world. Instructions

1.Boil the potatoes in their jackets for around 30 minutes or until tender. Once cooked, remove, drain and peel. Completely mash the potatoes and while still hot, add the curry powder, salt, black pepper, milk and flour to give a firm consistency.
2.With lightly floured hands, take around a tablespoon of the mixture and shape this into a ball, then flatten slightly to produce a croquette. With a knife, score the surface in a criss-cross pattern to prevent the exterior from splitting when fried. Repeat this process until all the mixture has been used up.
3.Heat the oil in a shallow frying pan over medium heat. Once hot, carefully add 2-3 croquettes at a time, shallow-frying for around 2-3 minutes, turning them over and continuing to cook until golden brown and crispy.
4.Similarly, shallow-fry the peel, turning occasionally, for around 2-3 minutes until crisp and lightly browned. Drain the croquettes and peel on kitchen paper and sprinkle with salt to taste before serving.
