Ingredients

1 lb boneless skinless chicken thighs
1 large onion , diced
4 garlic cloves , minced
1 tablespoon fresh minced ginger
1 -2 habaneros or 1 -2 serrano pepper , minced
14 curry leaves , shredded ( can find at Asian or Indian markets but may omit )
1 lime , juice of , fresh
3 tablespoons olive oil
1 tablespoon ground coriander
1 teaspoon ground cumin
1/4 teaspoon nutmeg
1/4 teaspoon mace
1/4 teaspoon cinnamon
1/2 teaspoon ground black pepper
1/4 teaspoon ground turmeric
1/2 teaspoon paprika
1 -3 teaspoon ground red chili pepper
2 tablespoons salt
Indian Spicy Chicken Curry Fry is a classic South Indian dish that has become popular worldwide. This spice-filled curry is the perfect dish to warm you up on a cold evening. This recipe can easily be adjusted to suit personal taste preferences by adjusting the spice levels, or substituting chicken with tofu or your favourite vegetarian meat replacement. The recipe uses spices which are staples in Indian cooking and can easily be sourced at your local Indian or Asian markets.

Instructions

1.Cut chicken into small pieces and marinate with lime juice and 1 tablespoon of salt.
2.In a pan, heat the olive oil over medium-high heat and add diced onions. Saute until soft and translucent then add minced garlic, ginger, curry leaves and minced peppers.
3.Saute for a few minutes until fragrant.
4.Add the coriander, cumin, nutmeg, mace, cinnamon, black pepper, turmeric, paprika, red chilli pepper and remaining salt. Cook for 1-2 minutes while stirring occasionally.
5.Add the marinated chicken and stir well, making sure all the pieces are coated in the spice mix.
6.Cover and cook for about 10-15 minutes, stirring occasionally until the chicken is cooked thoroughly. Remove the lid and cook for a further 3-5 minutes to allow the curry to thicken.
7.Serve with rice, naan bread or your favourite side dish.
