Instructions

1.Preheat oven to 425°F (218°C).
2.In a skillet over medium-high heat, toast coriander, cumin, and fennel seeds until fragrant, about 2 minutes. Remove from heat.
3.Using a spice grinder or mortar and pestle, grind toasted spices. Mix in salt and pepper. Rub spice mixture over pork tenderloin.
4.In the same skillet used for toasting spices, heat canola oil over medium-high heat. Sear pork tenderloin on all sides until browned. Place skillet in oven and roast pork until internal temperature reaches 145°F (63°C), about 15-20 minutes.
5.While pork is cooking, mix grated cucumber, Greek yogurt, lemon rind, salt, red pepper, and garlic. Serve pork sliced and topped with yogurt mixture.
