Ingredients

1 eggplants
1 teaspoon mustard seeds
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1 teaspoon curry powder
1 pinch ground ginger

1 onion , chopped
1 cup tomato sauce or 2 cups cherry tomatoes

1 teaspoon balsamic vinegar
1/4 teaspoon salt
1/4 teaspoon fresh ground black pepper
fresh cilantro , to top chopped

Instructions

1.Preheat oven to 375 degrees F (190 degrees C).
2.Cut the eggplant lengthwise into 3/4 inch slices
3.Mix the mustard seeds, cumin, coriander, curry powder, ginger, nutmeg, and cloves together in a small bowl.
4.Heat the olive oil in a large oven-safe skillet over medium heat
5.Add the onion and cook for 5 minutes, stirring occasionally
6.Add the spice mixture and garlic to the skillet. Cook for 1 minute, stirring constantly, until fragrant.
7.Add the tomato sauce, molasses, balsamic vinegar, salt, and pepper. Bring the mixture to a simmer, and cook for 5 minutes, stirring frequently.
8.Remove the skillet from heat and place the eggplant slices on top of the sauce
9.Transfer the skillet to the oven and bake for 20-25 minutes until eggplant is tender and sauce is bubbling.
10.Remove from the oven and let cool for a few minutes before serving. Garnish with fresh cilantro and serve hot.
