Ingredients

1 slice white bread
750 g chicken breast fillets , fat trimmed , roughly chopped
1/2 cup mint leaf , finely chopped
1 1/2 teaspoons ground turmeric
1 1/2 teaspoons smoked paprika
1 1/2 teaspoons ground cumin
1 1/2 teaspoons coriander seeds
2 tablespoons oil
1 lebanese cucumber
1 cup Greek yogurt
1/4 cup flat leaf parsley , finely chopped
1/4 cup mint leaf , finely chopped
1 lemon , rind finely grated , juiced

Instructions

1.In a food processor, pulse the bread until fine crumbs form.
2.In a large bowl, combine the chicken, mint, turmeric, paprika, cumin, coriander, oil, and bread crumbs. Mix well.
3.Divide the mixture into 8 portions and shape each into a 9 cm patty.
4.In a large non-stick frying pan, cook the patties for 5 minutes each side or until browned and cooked through.
5.Meanwhile, coarsely grate the cucumber. Place in a clean tea towel and squeeze out excess liquid.
6.In a small bowl, combine the cucumber, yoghurt, parsley, mint, lemon rind, and juice. Mix well.
7.Serve the patties with the raita.
