Ingredients

8 potatoes ( enough to serve four people , depending on size , use the floury sort that mashes well )
1 lb ground lamb , very lean
1 inch fresh ginger , finely chopped
1 garlic clove , crushed
1 teaspoon garam masala
5 spring onions , finely chopped
2 green chilies , finely chopped
6 tablespoons fresh coriander , finely chopped ( cilantro )
3 tablespoons of fresh mint , finely chopped
1 lime
salt and pepper
6 tomatoes , peeled and chopped
2 ounces butter
4 tablespoons double cream
2 tablespoons milk
1 teaspoon paprika
The traditional Shepherd's Pie gets a spicy Indian twist in this recipe. This dish is made with flavorful seasonings like ginger, garlic, and garam masala. Instructions

1.Preheat oven to 375°F (190°C).
2.Peel potatoes and boil them in salted water until they are tender enough to mash.
3.While the potatoes are boiling, heat a pan and add the lamb. Stir until browned and then add the ginger, garlic, and garam masala. Cook for 2 minutes.
4.Add the spring onions, chilies, coriander, mint, a squeeze of lime, salt, and pepper to the pan and cook for a further 5 minutes.
5.In a separate pan, fry the tomatoes until they are soft and pulpy. Season with salt, pepper, and a pinch of paprika.
6.Drain and mash the potatoes. Add the butter, milk, and cream and mix well. Season with salt and pepper.
7.In a large oven-proof dish, layer the lamb mixture and tomato sauce. Spread the mashed potato on top.
8.Sprinkle a pinch of paprika on top and bake for 25-30 minutes until the top is golden and the dish is heated through.
