Ingredients

100 g plain flour ( maida )
100 g fine semolina ( rawa )
100 g powdered sugar
100 g ghee ( clarified butter )
1/2 teaspoon cardamom powder
1/4 teaspoon ground nutmeg
1 teaspoon yogurt
1/4 teaspoon bicarbonate of soda
1/4 teaspoon saffron
1 teaspoon milk
Naankhatai is a traditional Indian eggless bakery item. These cookies are usually baked in the winter season and during festivals. These saffron-flavored cookies have a unique flavor and are very delicious. They are a perfect accompaniment for a big cup of Indian masala tea. Instructions

1.Preheat oven to 350F (180C) degrees.
2.Grease a baking tray or line with parchment paper.
3.Mix the saffron in 1 teaspoon of warm milk and keep aside.
4.In a mixing bowl, add plain flour, fine semolina, powdered sugar, and bicarbonate of soda then mix well.
5.Add the ghee and mix until crumbly.
6.Mix in the cardamom powder, ground nutmeg, yogurt, and saffron mixture.
7.Mix until everything is combined.
8.Take a small amount of dough and form it into a ball shape.
9.Gently press the top of each ball with a fork.
10.Place each ball on a greased baking tray.
11.Bake in the oven for 15-20 minutes or until golden brown.
12.Once baked, remove from oven and cool before serving.
