Ingredients

4 teaspoons olive oil
3/4 cup chopped carrot
1/2 cup chopped onion
1 teaspoon curry powder
1 teaspoon ground cumin
1/4 teaspoon ground cardamom
1 1/2 teaspoons kosher salt , divided

1 1/4 lbs boneless lamb , cut into 3/4 inch cubes
2 cups cooked basmati rice , warm
1/2 cup plain yogurt
1/2 cup mango chutney
1/4 cup sliced green onion
1/4 cup chopped peanuts
4 10-inch flour tortillas ( I use spinach flavored )

Instructions

1.Heat 2 teaspoons of olive oil in a large frying pan over medium-high heat.
2.Add chopped carrot and onion and cook until soft and brown, about 5 minutes.
3.Add curry powder, cumin, cardamom, 1 teaspoon kosher salt, and some pepper to the pan. Cook for 1-2 minutes, stirring continuously.
4.Remove the spices and vegetables from the pan and set aside.
5.Add the remaining 2 teaspoons of olive oil to the pan and heat over high heat.
6.When the oil is hot, add the lamb cubes and cook until browned on all sides, about 5 minutes.
7.Reduce heat to medium-low and continue cooking the lamb until it is cooked to your liking; between 5-10 minutes.
8.In a separate bowl, mix the warm, cooked rice with the plain yogurt, mango chutney, green onion, and chopped peanuts.
9.Once the lamb is cooked, add the vegetables back into the frying pan and stir everything together until it is heated through.
10.Warm the tortillas in the oven or microwave.
11.Assemble the wraps by dividing the lamb mixture and rice mix between the four tortillas. Roll them up and enjoy!
