4 rotis
4 eggs
2 tablespoons oil
1/2 cucumber
1 red onion
4 green or purple chili peppers
tomato sauce
diced cooked chicken ( optional , for chicken egg roll )

Instructions

1.Cut half of the cucumber and onion into thin strips and set them aside. Chop the remaining cucumber, onion, and chilli peppers finely and mix together in a bowl.
2.Heat the oil in a pan over medium heat, then break the eggs into the pan and let them cook for 1 minute. Flip and cook for an additional minute. Break the egg into smaller pieces while it is cooking.
3.Place the roti on a flat surface. Add a spoonful of tomato sauce to the center of the roti.
4.Add a spoonful of the egg mixture on top of the tomato sauce.
5.Add a few strips of the cucumber and onion on top of the egg mixture.
6.Add some chicken if desired for a chicken egg roll.
7.Roll the roti tightly to form a wrap. Serve with chili sauce or ketchup on the side.
