The creaminess of the sauce complements the texture of the cooked vegetables, while the curry powder provides a warming spiciness.
The almonds add crunch and a nutty taste to the dish.

CONS

The canned soup used in this recipe does contain sodium, so if you are watching your salt intake, you may want to substitute with a homemade cream soup.
Additionally, the mayonnaise and bread crumb topping make this a higher calorie dish, although the recipe serves 8 people, so it can easily be shared.

HEALTH & BENEFITS

Cauliflower and potatoes are both excellent sources of fiber, vitamin C, and potassium. They are also low in calories, making them a great addition to any healthy diet. The coconut milk used in the recipe provides a creamy texture, but does contain saturated fat. However, studies suggest that the medium-chain triglycerides found in coconut may be beneficial for weight loss and heart health, and may also have antimicrobial and anti-inflammatory properties. Curry powder contains turmeric, a spice that has been linked to fighting inflammation and disease.
