Ingredients

3 cans evaporated milk
3 egg whites , whisked until peaks form
5 cups confectioners ' sugar
1 teaspoon ground cardamom
1 tablespoon rose water
1 1/2 cups pistachios , chopped
1/2 cup golden raisin
3/4 cup sliced almonds
2 tablespoons candied cherries , halved
Kulfi is a traditional frozen dessert from the Indian subcontinent, enjoyed by people throughout the world as a summertime treat. This dessert is a variation of ice cream, but creamier, denser, and has an intense flavor. Kulfi comes in different flavors like mango, rose, saffron, pistachio, and chocolate, with pistachio being the most popular one. Instructions

1.In a large heavy-bottomed pot, heat the evaporated milk over medium-high heat. Stirring often, bring it to a boil.
2.Reduce the heat and let it simmer, stirring occasionally. Keep stirring within intervals until the volume has been reduced to about 1/3.
3.Add the confectioner's sugar, cardamom and rosewater and whisk until everything is well combined and dissolved completely.
4.Remove the pot from the heat and add elephant apples, pistachios, sliced almonds, raisins, and candied cherries. Mix well.
5.Put the mixture in the molds of your choice, tray, or ice cream maker. If you are using molds, cover them with foil and poke a hole in the center of each. Insert a wooden stick or spoon into the center of each mold. Allow the kulfi to freeze upright for at least 4-6 hours.
