1/2 cup onion , chopped
3 garlic cloves , chopped
1 teaspoon cumin seed
1/2 teaspoon mustard seeds
1 tablespoon ginger , grated fresh
1 fresh chili pepper ( jalapeno , serrano OK )
1 eggplant , cubed
1 bunch spinach , fresh rinsed
4 tomatoes , chopped
1 teaspoon turmeric
1 1/2 teaspoons salt
15 ounces garbanzo beans
1 tablespoon lemon juice , fresh
1 tablespoon sugar
1 cup white basmati rice , rinsed twice
2 cups water
1 teaspoon salt
1 teaspoon turmeric
1 tablespoon ginger , fresh , grated
1 tablespoon ghee ( olive oil OK )

Instructions

1.Heat ghee in a large saucepan over medium heat.
2.Add onion, garlic, cumin seed, and mustard seeds and sauté for 5 minutes.
3.Add fresh ginger and chili pepper, continue sautéing for 2 minutes.
4.Add eggplant and spinach, stir and let cook for 5 minutes.
5.Add chopped tomatoes, turmeric, and salt, mix well and simmer for 10 minutes.
6.Add garbanzo beans, lemon juice, and sugar, simmer for another 5 to 10 minutes.
7.While the stew is cooking, rinse basmati rice twice.
8.In a separate pot, combine rice, water, salt, turmeric, and ghee, bring to boil.
9.Reduce heat, cover the pot, and simmer for 18-20 minutes.
10.Fluff the rice with a fork, and let it sit covered for another 5 minutes.
11.Serve the stew over the rice.
