Ingredients

6 lbs ham ( Any will do , follow cooking instructions for the type of ham )
3 small onions
3 fresh cayenne peppers
3 Thai chiles ( any pepper will do here )
3 lbs baby carrots
2 large navel oranges or 4 -5 clementines
1 jar apricot preserves
3/4 cup white raisins
1 can crushed pineapple in juice
2 tablespoons brown sugar
3 tablespoons local raw honey
1 tablespoon garam masala ( or use your favorite curry )
2 teaspoons allspice
1/2 teaspoon cinnamon
1 teaspoon blood orange olive oil ( or olive oil with zest of 1 orange )
1/2 cup cream sherry
whole cloves

Instructions

1.Preheat oven to 350°F.

4.Dice and quarter 2 onions and add to the pan with cayenne peppers, Thai chiles and cloves, mixing around, so they are evenly distributed.
5.Grate zest of 1-2 oranges or clementines and add to a small glass bowl with apricot preserves, white raisins, juice from 1 orange or clementine, pineapple in juice, brown sugar, honey, garam masala, allspice, cinnamon, and blood orange olive oil, mix until combined.
6.Pour mixture over the ham.
7.Roast ham for 2 hours, basting it once every 30 minutes.
8.Add baby carrots around the ham, drizzle with olive oil, and sprinkle salt and pepper.
9.Roast for another 30-45 minutes or until the carrots and ham look caramelized. Serve hot.
