5 1/3 cups skim milk
1 2/3 cups half-and-half
6 green cardamom pods

1 1/4 cups canola oil or 1 1/4 cups ghee
6 -8 tablespoons granulated sugar

Instructions

3.While the carrots are cooking, use a mortar and pestle to grind 6 green cardamom pods and 2 cinnamon sticks into a fine powder.
4.In a separate pan, heat 2 tablespoons of canola oil over medium-low heat. Add 1/2 cup of sliced or slivered almonds and sauté until golden brown. Set aside.
5.Once the milk is almost fully absorbed, add 1 1/4 cups of canola oil or ghee (clarified butter) to the carrot mixture. Cook on low heat, stirring occasionally, until the oil is fully absorbed.
6.Add 6-8 tablespoons of granulated sugar, or to taste, and stir until fully combined.
7.Add the cardamom and cinnamon powder to the mixture and stir well.
8.Cook for another 5-10 minutes until the carrot mixture is a dark orange color and slightly sticky.
9.Add the sautéed almonds on top and serve warm or chilled.
