Ingredients

1/2 gallon water
1 cup pickling salt
2 cups dark dark brown sugar
1 cup real maple syrup
salmon , cleaned and cut into 1/2 inch strips
3/4 cup honey
1/4 cup water

The recipe involves curing salmon strips in pickling salt, brown sugar, real maple syrup and glazing the cured salmon with honey before smoking to add sweetness and golden brown color to the salmon. The smoky flavor and tender texture can be enjoyed as a main dish or as a snack with crackers. The recipe requires a smoker or smoker grill to be prepared and may take time and effort but the end result is worth it.

Instructions

1.In a large bowl, mix water, pickling salt, and dark brown sugar until dissolved.
2.Add real maple syrup and stir.
3.Add cleaned salmon strips and let sit for at least 8 hours or overnight in a fridge.
4.Preheat smoker to 175°F.
5.Remove salmon from the bowl and rinse well in cold water. Pat dry with paper towels.
6.Mix honey and water to make a glaze and generously brush over the salmon strips.
7.Place the salmon strips onto the smoker racks and smoke for 2-4 hours depending on the desired level of smokiness.
