Ingredients

3 tablespoons vegetable oil
1/2 teaspoon mustard seed
1 small onion , chopped
1/2 teaspoon cumin seeds
1 tablespoon ginger-garlic paste
1 teaspoon chili powder , or more to taste
1 teaspoon ground turmeric
1 head broccoli , chopped
2 teaspoons water
2 teaspoons salt
3 tablespoons gram flour ( garbanzo bean flour ) , or more as needed

Instructions

1.Heat 3 tablespoons of vegetable oil in a pan over medium heat.
2.Add 1/2 teaspoon of mustard seeds and wait for them to start popping.
3.Add 1 small chopped onion and sauté for about 2 minutes.
4.Add 1/2 teaspoon of cumin seeds and 1 tablespoon of ginger-garlic paste. Mix well and sauté for another 2 minutes.
5.Add 1 teaspoon of chili powder, 1 teaspoon of ground turmeric, and the chopped broccoli to the pan and stir well.
6.Add 2 teaspoons of water and 2 teaspoons of salt. Stir well and cover the pan with a lid.
7.Cook for about 10 minutes, stirring occasionally.
8.Add 3 tablespoons of gram flour (garbanzo bean flour) and mix well. If the mixture is too dry, add more gram flour as needed.
9.Cook for another 5 minutes until the broccoli is tender and the junka is slightly crispy.
10.Drizzle 1 teaspoon of vegetable oil over the top and serve hot.
