Ingredients

2 cups uncooked brown basmati rice or 2 cups uncooked basmati rice
3 1/2 cups water
1/2 cup raw pumpkin seeds
2 tablespoons olive oil
1 pinch asafoetida powder ( also called hing )
1/2 teaspoon cumin seed
1/2 teaspoon mustard seeds
1/2 teaspoon sesame seeds
1/2 cup onion , chopped
3 tablespoons fresh cilantro , chopped
1 teaspoon cumin powder
1/2 teaspoon coriander powder
1 teaspoon hot chili powder
1/2 teaspoon turmeric
1/2 teaspoon sugar
4 tablespoons lime juice
India spiced rice with pumpkin seeds is a delicious and filling side dish that makes a great accompaniment to any meal. Instructions

1.Rinse the rice in cold water and drain.
2.In a large saucepan, bring the water to a boil and add the rice.
3.Cover the saucepan and reduce the heat to low. Simmer for 40-50 minutes or until the water has been absorbed and the rice is tender.
4.In a skillet, heat the olive oil and add in the pumpkin seeds, asafoetida powder, cumin seed, mustard seeds and sesame seeds. Cook for 2-3 minutes or until the seeds start to pop and turn golden brown.
5.Add in the onion and saute until translucent.
6.Add in the cilantro, cumin powder, coriander powder, chili powder, turmeric and sugar. Mix well.
7.Fluff the rice with a fork and stir in the spice mixture and lime juice.
8.Serve hot or at room temperature.
