Instructions

1.In a large bowl, knead the wheat flour dough by adding salt and hot water until it forms a smooth and soft dough.
2.Divide the dough into three equal portions and add tomato puree to one portion, spinach puree to another, and leave the third plain.
3.Take one portion of dough and roll it into a circle. Cut circles out of the dough using a cookie cutter.
4.Repeat the process with the remaining two portions of dough, making sure to keep the same size for each circle.
5.Stack a green circle on top of a plain one, and then top with a red circle.
6.Use a sharp kitchen knife or pizza cutter to make four to six cuts all around the edges of the stacked circles, to create the 'tiranga' effect.
7.Heat oil in a deep fryer or wok over medium heat.
8.Carefully place the stacked puris in the hot oil and fry until golden brown and crisp.
9.Remove the puris from the oil and place on a kitchen tissue or paper towel to remove excess oil. Serve immediately with chutney or sauce of your choice.
