Ingredients

1 lb Italian sausage , casings removed ( sweet or hot )
1 cup onion , diced
4 garlic cloves , minced
1 can tomato paste
2 cups prepared tomato-basil spaghetti sauce
1 can diced tomatoes
1 1/2 teaspoons dried basil
1/2 teaspoon marjoram or 1/2 teaspoon oregano
1 teaspoon sea salt or 1 teaspoon kosher salt
1 teaspoon sugar
8 ounces mozzarella cheese , sliced
4 ounces mozzarella cheese , shredded
1 container part-skim ricotta cheese
1 egg
3/4 cup parmesan cheese ( divided )
2 tablespoons fresh parsley , chopped
6 no-cook lasagna noodles
This improvised sausage lasagna is a hearty and comforting dish that is ideal for a family dinner or potluck. The layers of cheese, sausage, and tomato sauce are packed with flavor and provide plenty of protein and calcium. While this recipe may take some time to assemble, it can be prepared ahead of time and can be reheated for leftovers throughout the week. Instructions

1.In a skillet, cook Italian sausage together with diced onions and minced garlic until it's no longer pink.
2.Add tomato paste, diced tomatoes, spaghetti sauce, dried basil, marjoram or oregano, sea salt or kosher salt, and sugar to the sausage mixture. Simmer for 10-15 minutes.
3.In a bowl, beat an egg and mix it together with part-skim ricotta cheese, 1/2 cup of parmesan cheese, and chopped parsley.
4.Grease a 9x13 inch baking dish and spread 1 cup of the sausage mixture over the bottom of the dish. Place 3 no-cook lasagna noodles on top of the sausage mixture, cutting them to fit the pan if necessary.
5.Spread half of the cheese mixture over the noodles and top it with 1/3 of the sliced mozzarella cheese, then spoon 1 cup of sausage mixture on top of the cheese layer. Repeat these layers (noodles, cheese mixture, sliced mozzarella cheese, sausage mixture), and finish it with a final layer of noodles, topped with the remaining sausage mixture and shredded mozzarella cheese.
6.Cover with foil and bake at 375 degrees Fahrenheit for 25 minutes. Remove the foil, sprinkle the remaining 1/4 cup of parmesan cheese over the top of the lasagna, and bake it for another 25 minutes until the cheese is melted and bubbly.
