Ingredients

2 medium onions , chopped
1/2 - 3/4 cup olive oil
2 garlic cloves , crushed
3 medium tomatoes , peeled and chopped
4 tablespoons chopped parsley
1 tablespoon chopped of fresh mint or 1/2 teaspoon dried mint , crumbled
salt and pepper
2 medium eggplants
1 teaspoon sugar
2 tablespoons fresh lemon juice

Instructions

1.Preheat the oven to 350°F.
2.Heat the olive oil in a saucepan over medium heat. Add the onions and sauté until they are softened.

4.Cook the mixture for about 10 minutes until the tomatoes are softened.
5.Slice the eggplants in half lengthwise and scoop out some of the flesh to create a hollow space for the stuffing.
6.Fill the eggplant halves with the tomato mixture and place them in a baking dish.
7.Sprinkle the sugar over the stuffed eggplants and drizzle with lemon juice.
8.Bake for 40-50 minutes until the eggplants are tender and the filling is golden brown.
