Ingredients

2/3 cup guacamole , homemade is preferable ( see Guacamole Muy Facil )
2 cups garbanzo beans , cooked and cooled
2 cups bulgur or 2 cups couscous , cooked and cooled
1/3 cup sliced green onion
2 roma tomatoes , ripe but firm , sliced thinly
1/2 cup cucumber , diced
1/2 cup feta cheese
1/4 cup sliced ripe olives
3/4 cup Baby Spinach , en chiffonade
6 whole wheat tortillas ( burrito size )

This recipe features a hearty combination of garbanzo beans, bulgur or couscous, feta cheese, olives, and fresh veggies, all rolled up in a warm, whole wheat tortilla. Instructions

1.In a large bowl, mix together the garbanzo beans, bulgur or couscous, sliced green onion, diced cucumber, feta cheese, sliced ripe olives, and baby spinach.
2.Heat the whole wheat tortillas in a microwave or on a griddle until warm and pliable.
3.Spread a generous spoonful of guacamole on each tortilla.
4.Add a few slices of ripe but firm Roma tomatoes to each tortilla.
5.Dividing the garbanzo bean mixture equally among the tortillas, spoon it on top of the guacamole and tomatoes.
6.Squeeze fresh lemon juice over the fillings, and sprinkle sumac on top.
7.Fold the sides of the tortilla in towards the center, then roll the burrito up from the bottom edge.
8.Serve immediately, or wrap each burrito tightly in foil and refrigerate for up to 2 days. To reheat, unwrap the burrito and microwave for 1-2 minutes until warmed through.
