Instructions

1.Preheat oven to 325 degrees F (165 degrees C).

3.Beat in 2/3 cup sugar and 1 teaspoon flour until mixture is thick.
4.Gradually whisk in 2 1/2 cups milk.
5.Strain mixture through a fine sieve into another bowl.
6.Add 1/4 teaspoon salt and 1 teaspoon vanilla extract; stir until well combined.
7.Grease a medium baking dish.
8.In another bowl, beat 2 egg whites until frothy.
9.Add 1/8 teaspoon cream of tartar and a dash of salt.
10.Beat with an electric mixer until soft peaks form.
11.Add 1/2 teaspoon vanilla extract and beat until combined.
12.Gradually add 1/4 cup sugar and beat until stiff peaks form.
13.Fold egg white mixture into milk mixture until well combined.
14.Pour mixture into prepared dish.
15.Place dish in a large baking pan and fill pan with hot water.
16.Bake in preheated oven until a knife inserted in the center comes out clean, about 50 minutes.
17.Chill in the refrigerator for several hours before serving.
